Systematic investigations of anthocyanin–metal interactions by Raman spectroscopy

ABSTRACT
The FT‐Raman spectra of the chloride salts pelargonidin‐3‐glucoside, cyanidin‐3‐glucoside and delphinidin‐3‐glucoside, their structures at pH 5.0 interaction with aluminium ferric ions are presented for first time discussed regard to spectroscopic response. Two marker bands approximately 1510 1330/1350 cm −1 one band were identified being characteristic formation chelates, respectively, delphinidin‐3‐glucoside. In contrast, exhibiting single hydroxyl group in B‐ring, did not form metal which could be clearly demonstrated by missing bands. anthocyanin–metal chelates was also verified model systems containing commercial sugar beet pectin a pectic polysaccharide fraction isolated thereof, respectively. addition, absence prepared citrate buffer confirmed, effects low high methoxylated citrus pectins on chelate studied.
