ABSTRACT
The objective of the present work was to determine nutrient and polyphenolic composition dried strawberry press cake (SPC), as well that its seedless fraction, termed exhausted flesh (ESF). study materials were obtained over three consecutive years from an industrial facility manufacturing concentrated fruit juices. On average, SPC consists 40 % seeds, 3.5 sand, about 55 ESF. In dry matter ESF, mean content fat is 9.8 %, protein 17.3 20.4 total polyphenols 3,449 5,410 mg/100 g, respectively. Both are rich in dietary fiber, whose amounts 60 %. predominant ESF flavanols ellagitannins, which collectively constitute 95 determined polyphenol content. composition, note high ellagitannin, agrimoniin, approximately 1,000 g DW (dry weight). has disadvantage being highly contaminated with sand (3.4 %), accumulates (5.6 %). However, compared SPC, contains 20 more proteins almost times less fat. Based on our results, it appears may be considered a potential raw material for seed recovery. Moreover, cake, especially fraction (ESF), despite substantial contamination used widely available extraction proanthocyanidins and/or dimeric agrimoniin.
