ABSTRACT
Changes in the biophysical traits of pectoral muscles chickens with deep myopathy (DPM) were analysed selected instrumental techniques. For comparative purposes, research used both samples pectoralis minor 39–42-day-old Cobb 500 broiler and major DPM symptoms, as well. Computer Image Analysis (CIA) revealed that characterised by smaller area muscle fibres' cross-sectional (CSA) than normal muscles. A longitudinal section also confirmed presence large spaces between bundles fibres. The results Differential Scanning Calorimetry (DSC) analysis showed all temperatures transformations referring to symptoms significantly lower noted without DPM. enthalpy values observed healthy water dynamics low-field NMR spin–lattice relaxation time T1 p. higher defect. On other hand, an inverse dependence was samples. value long T22 reduced pathological lesions. In conclusion, three advanced analytical tools this study (CIA, DSC, LF NMR) provide new insight into characterization protein changes chicken broilers
