ABSTRACT
Abstract Soybean oils treated with 25 or 100 ppb polydimethylsiloxane (PDMS) and a control no PDMS were heated at 180 °C for 48 h. The decomposition of linoleate tocopherols was monitored, as well the changes in concentration 4‐hydroxynonenal (HNE). HNE rapidly formed beginning heating period oil containing PDMS. reached maximum 0.033 μmol/g then began to slowly decline. attained 18 h compared 28 25‐ppb In 100‐ppb increased very during first 32 after which faster, reaching 46 showed decline period. Thus, had beneficial effect preventing formation toxic HNE.
