ABSTRACT
Abstract Yerba mate is a tree natural from South America, traditionally daily consumed as hot ( chimarrão ) or cold tereré and roasted leaves (mate tea) infusions, being an important source of polyphenols flavonoids in human nutrition. To produce bioactive-rich extracts yerba mate, oven-dried at 35 °C three different commercial products, named M, T, S, were extracted using General Recognized Safe solvents (distilled water (W), ethanol (E), water: (1:1, v:v) (WE)). The analyzed for total soluble solids, titratable acidity, phenolic content (TPC), flavonoid (TFC), antioxidant activity. WE solvent resulted the highest TPC TFC. However, samples showed higher concentration phytochemicals than leaves, sample T lowest solids (°Brix). industrial processing aids TFC preservation, resulting with superior when compared sample.
