Comparing different single milk droplet drying process with spray drying process

ABSTRACT
Spray drying is currently the main method of industrial milk production because its high speed and process control accuracy. By controlling parameters spray to characteristics powder well researched. However, mechanism in dryer still not very clear. Methods measuring single droplet kinetics are widely used instead directly modelling kinetics. In this study, methods including sessile drying, filament hanging levitator room temperature compare simulate dryer. Experiments show that droplets more spherical, but final dry particles tend be donut-like due compression upper bottom sides by ultrasonic waves. only suspended on friction. Due gravity, shape dried non-sphere shape. half-sphere shape, contact area changing capillary force. comparison, particle morphologies these significantly different from those dryer, therefore, explore spray-dried monitoring may suitable some situation especially multi-component materials.
