ABSTRACT
Blue whiting (Micromesistius poutassou), pouting (Trisopterus luscus) and common dab (Limanda limanda) are underutilized fish species attractive in terms of sustainability. However, there is limited information about their nutritional characteristics as well potential presence environmental contaminants. Specimens caught European waters were characterised for content essential toxic elements. The three species, along with carp blue mussels, relevant sustainable production too, employed raw materials the development semi-industrial ready-to-eat products. Calcium, copper, iodine, iron, selenium, zinc, cadmium, lead, mercury, nickel determined by ICP-MS, whereas methylmercury was HPLC-ICP-MS. These two techniques also used to determine arsenic inorganic arsenic, respectively, mussel derived Differences element contents related biology ecology examined species. Intake nutrients exposure contaminants assessed relation DRVs HBGVs, respectively. All found be valuable dietary sources selenium. Pouting rich iodine mussels good iron. had comparatively higher levels mercury generally no concern both Iodine bioaccessibility studied whiting, a an intermediate content, 98%. Selenium:mercury molar ratios favourable. products selenium many them provided appreciable amounts calcium, copper zinc.
