ABSTRACT
Date palm (Phoenix dactylifera L.) fruits are rich in various bioactive compounds, such as phenolic acids, hydroxycinnamates, flavonoid glycosides, coumarins, alkaloids, and proanthocyanidin oligomers. The focus of this study was to develop a simplex-centroid mix design method identify the most suitable mixture solvents (water, acetone, methanol) extract compounds from date fruits. Three extraction methanol, acetone) were investigated during determine, total content (TPC), (TFC), antioxidant activity (free radical DPPH) ferric reduction ability (FRAP). results showed that polar mixtures effective extracting phenolics. optimum solvent for Binary water-acetone (50%) presenting TPC, TFC, DPPH FRAP values 502.88 mg GAE.100 g-1 DW, 206.23 QE.100 77 0.01% 1688.66 μmol.100 respectively. also confirmed strong correlation between amount polyphenols given activities observed assays. This presents pragmatic efficient way choose combination
