ABSTRACT
Escalating public health concerns necessitate innovative approaches to food sources. Microgreens, nutrient-rich seedlings of vegetables and herbs, have gained recognition as functional foods. This review explores the evolution microgreens, cultivation methods, biochemical changes during germination, nutritional content, benefits, commercial significance. Comprehensive studies demonstrated that microgreens an elevated level various nutrients. Further, in vitro vivo research validated their antioxidant, anticancer, antibacterial, anti-inflammatory, anti-obesity, antidiabetic properties. termed "desert food," show promise for sustainable production climate-vulnerable regions. paper synthesizes recent on addressing challenges gaps understanding content benefits. It contributes valuable insights future research, fostering agriculture enhancing human nutrition.
