Remarkable impact of steam temperature on ginsenosides transformation from fresh ginseng to red ginseng

ABSTRACT
Temperature is an essential condition in red ginseng processing. The pharmacological activities of under different steam temperatures are significantly different.In this study, ultrahigh-performance liquid chromatography quadrupole time-of-flight tandem mass spectrometry was developed to distinguish the products that were steamed at high and low temperatures. Multivariate statistical analyses such as principal component analysis supervised orthogonal partial least squared discrimination used determine influential components samples.The results showed samples can be identified, characteristic 20-gluco-ginsenoside Rf, ginsenoside Re, Rg1, malonyl-ginsenoside Rb1 temperature. Meanwhile, temperature 20R-ginsenoside Rs3 Rs4. Polar ginsenosides abundant temperature, whereas higher levels less polar detected temperature.This study makes first time differences between their transformation have been observed systematically chemistry level. suggested identified chemical markers illustrate
