ABSTRACT
The nutritive profile is a reliance meat quality trait and often closely related to marketable ages in production. Goose herbivorous poultry with the being rich values. In this study, geese from different (70, 120 300-day-old) were chosen, proximate composition, amino acids, fatty acids metabolomic profiles of breast determined. Notably, 300-day-old contained richer total essential (Thr, Lys others), umami (Asp, Glu Arg) polyunsaturated acid (C18:2n6c) than younger geese. Using widely targeted metabolomics analysis, 776 metabolites which belonged acyls, nucleotides, organic glycerophospholipids, carboxylic detected goose meat. Among them, carnitine, anserine nicotinamide riboside increased, while hypoxanthine, 2-methylsuccinic glutaric decreased increasing age. Additionally, free declined, may transform into bound state deposit older Taken together, these data provided strategy for underlying meat, some potential biomarkers authentication • Marketable profoundly influence nutritional values Widely feasible tool discrimination profiles. Potential identified birds more nutritious healthy.
