ABSTRACT
In this study, the production of yellow pigment by Monascus purpureus upon addition sucrose esters under submerged fermentation was significantly promoted. When integrated with immobilised using 0.75 g corn cob as carrier for 5 days, yield reached 39.24 AU/50 mL and 4.12 times that control group. integrative five-batch gave a higher than free fermentation. The extracellular in fourth batch maximum value 56.71 mL. Transcriptome analysis revealed effectively regulated pyruvate metabolism process, changed intrinsic components cell membrane permeability, improved transport capacity across membrane. enriched KEGG metabolic pathways enhanced glycolysis/gluconeogenesis pathway involved synthesis altered flow. There an increase precursors synthesis—such acetyl-CoA, which is produced during tyrosine metabolism—thereby increasing production. This study provides some potential approaches improving whilst also deepening theoretical understanding underpinning mechanisms.
