ABSTRACT
Changes in the microbial diversity of golden pompano (Trachinotus ovatus) under different temperature conditions, including room (RT, 20 °C), refrigerated (RF, 4 and supercooling preservation (SP, −1 were investigated using high-throughput sequencing (HTS). The results showed that total viable count (TVC) volatile basic nitrogen increased as storage period was extended. TVC suggested shelf-life 30 h, 8 days, 21 days for RT, RF, SP, respectively. HTS analysis samples revealed community decreased time increased, decrease delayed by low temperatures. Significant differences at genus level dominant bacteria also observed among groups exposed to conditions. spoilage stored °C Photobacterium, those sample Shewanella, Pseudomonas, Psychrobacter, Pseudomonas. This study provides a basis developing strategies control bacterial growth.
