ABSTRACT
Texture is a relevant parameter for the assessment of cured ham's quality. In this study rapid on-line instrumental technique measurement texture pieces smoked ham intended sale as "Speck Alto Adige" PGI was developed. Speck samples were subjected to compression test using portable Shore A tester, and data compared with conventional analyses (texture profile analysis stress relaxation test) sensory evaluations.
