ABSTRACT
Umami peptides are small molecular weight oligopeptides that play a role in umami taste attributes. However, the identification of is easily limited by environmental conditions, and abundant source high chromatographic separation efficiency remain difficult. Herein, we report robust strategy based on phage random linear heptapeptide library targets T1R1-Venus flytrap domain (T1R1-VFT). Two candidate (MTLERPW MNLHLSF) were readily identified with affinity for T1R1-VFT binding (KD MW-7 MF-7 790 630 nM, respectively). The two exhibited significantly enhanced intensity when added to monosodium glutamate solution. Overall, this shows could be developed via display technology first time. platform has promising application discover other receptors interest more room improvement future.
