ABSTRACT
Pru p 7 (also named Peamaclein) is a member of the gibberellin-regulated protein family, which latest foodborne allergenic identified in peach. In this paper, prokaryotic expression and identification were performed, properties, structure, homology analyzed. addition, preliminary screening B-cell linear epitopes was performed by bioinformatics software prediction method, three using slot-blot immune microarray assay combined with an score matrix (P-1, AA16-21, AGYQER; P-2, AA40-46, TYGNKDE; P-3, AA52-59, DLKNSKGN). Moreover, electrostatic potential these analyzed, stability after ultrahigh pressure treatment also verified. Finally, amino acids that play key roles obtained acid mutations. These results may contribute to further understanding prevention peach allergy.
