Synthesis and antioxidant evaluation of lipophilic oleuropein aglycone derivatives

ABSTRACT
Oleuropein is the most important phenolic compound present in olive cultivars, but it scarcely extra virgin oil (EVOO) due to its high hydrophilicity and degradability. Thus, a set of oleuropein aglycone derivatives were synthesized by transacetylation under mild conditions with aim circumventing these drawbacks making active moiety suitable be added food fats. The (closed ring form) obtained hydrolyzing using Lewis acid catalysis. Then, permeation profiles as well antioxidant capacity evaluated ORAC, DPPH assays ROS formation SH-SY5Y cell line. biological activities compounds exhibited dependence on their level lipophilicity.
