ABSTRACT
In this study, the immunogenic and structural properties of ovalbumin (OVA) induced by pulsed electric fields (PEF) treatment were investigated. The estimated IgG IgE binding abilities, which determined enzyme-linked immunosorbent assay (ELISA) using rabbit polyclonal antibodies egg-allergy patients' sera, respectively. changes monitored circular dichroism (CD), ultraviolet absorption, fluorescence spectroscopy. When OVA samples treated at low field intensity (below 25 kV/cm, for 180 μs) or short time (less than 60 μs, 35 kV/cm), capacities gradually increased due to partial unfolding OVA. This was reflected in increase free SH content, surface hydrophobicity, UV absorption. However, when high (exceeding long (more abilities significantly reduced aggregation also decrease Moreover, high-intensity PEF caused a loss α-helix structure. results showed that largest observed kV/cm μs. Therefore, processing has potential utilization as method egg desensitization.
