ABSTRACT
Abstract The aim of this study was to determine the effect heat treatment edible insects on antioxidant and anti‐inflammatory activities peptide fractions from hydrolysates obtained by in vitro gastrointestinal digestion thereof. Identification bioactive peptides their chemical synthesis were carried out as well. highest antiradical activity against ABTS •+ DPPH • noted for fraction Gryllodes sigillatus protein preparation ( EC 50 value 2.75 6.91 μg mL −1 , respectively). This exhibited strongest LOX COX ‐2 inhibitory IC 0.13 0.26 Tenebrio molitor showed Fe 2+ chelating ability 2.21 ) reducing power (0.198). process has a positive properties peptides. All identified synthesised insect activity.
