Summary The influence of ultrasound power (1000–3000 W/L), citric acid concentration (0–3%) and solid:liquid ratio (1:5–1:15) on the phenolic compounds recovery antioxidant capacity Syrah grape skin extracts were evaluated. Total varied from 6485 to 11732 mg gallic acid/100 g monomeric anthocyanin content 453 685 malvidin‐3‐glucoside/100 g. measured by ORAC ABTS methods ranged 230 516 μmol Trolox/g 442 939 Trolox/g, respectively. most suitable conditions chosen for extraction, within studied ranges, 3000 W/L power, 2.5% 1:15. extraction yield was satisfactory, with a 59% quantified compounds, only 3 min processing. Ultrasound considered method as compared conventional improving acids facilitating their release.
