ABSTRACT
Yeasts identified as Candida stellata are frequently associated with overripe and botrytized grapes can survive in the fermenting must until completion of vinification. The molecular taxonomic examination 41 strains deposited six culture collections or described literature C. revealed that most those isolated from wines belonged to zemplinina related species. This confusion around position may account for rather controversial descriptions oenological properties literature. Because authors did not find it among newly wines, was proposed is usually than occurs on wine fermentation.
