ABSTRACT
In order to investigate the effects of concentration and temperature treatment carboxymethyl-chitosan (CM-C) solution on quality "Niuxin" persimmon during cold storage, fruits were soaked in CM-C different concentrations, study changes indicators including SSC, total titratable acid, firmness, soluble tannin, protopectin, peroxidase (POD), polyphenol oxidase (PPO), relative electrical conductivity storage. Results showed that heat treatment, combined heat, could effectively maintain storage persimmon. Then, a comprehensive evaluation method was proposed for based factor analysis: principal component analysis used perform above eight indicators, cumulative variance contribution reached 93.352%. A combination at 50°C 1% finalized as best way keep fresh, optimal period 40 days. Practical applications This investigated temperatures concentrations solution-treated fruit. work will help extend life expand sales area fruit increase industrial income.
