ABSTRACT
Currently, bee-gathered pollen (bee pollen) is commonly used worldwide as a dietary supplement and recognized for its curative properties. Floral also important but less due to lack of investigation. This study aims determine the morphological characteristics nutritional phytochemical properties floral maize pollen. Fresh grains harvested from farm plants are yellow in colour spheroid shape. They change amber indented prismatic solid shapes when dehydrated. The main composition carbohydrates (44.30±3.73%), followed by moisture (23.38±5.73%), crude proteins (17.16±3.13%), fibres (9.56±0.92%), ash (4.98±0.11%), while lowest content observed fats (0.62±0.06%). predominant mineral potassium (768.50±11.40 mg 100 g -1 ), sodium (695.10±9.70 calcium (147.20±12.60 magnesium (97.30±2.9 ). microelements (with average values) consist iron (49.50±3.30 ) zinc (30.00±3.70 Excellent add value Maize contains high total phenolic (TPC) flavonoid (TFC) 783.02 GAE 1706.83 QE , respectively, possesses strong antioxidant activity 10.54 mL . derived products can serve future food resources human consumption source functional bioactive compounds nutraceutical pharmaceutical industries.
