Physicochemical parameters as indicators of the authenticity of monofloral honey from the territory of the Republic of Serbia

The aim of this research was to verify the authenticity monofloral honeys from territory Republic Serbia on basis physicochemical parameters routinely measured in honey quality control using multivariate analysis. Seventeen samples (11 acacia and 6 sunflower honey) were analyzed. Physicochemical analysis included examination basic qualitative quantitative analyses phenolic compounds. In tested, a total 93 compounds tentatively identified, 19 them quantified. obtained data served as input for hеаt map, which is useful visualizing numerical data, used purpose. results showed that applied can serve clearly separate honeys.
