ABSTRACT
Due to its similarity with human milk and low allergenic properties, donkey has long been used as an alternative for infants patients cow's protein allergy. In addition, this is attracting growing interest in nutrition because of presumed health benefits. It antioxidant, antimicrobial, antitumoral, antiproliferative, antidiabetic activity. Also, it stimulates the immune system, regulates gastrointestinal flora, prevents inflammatory diseases. Although all components can contribute functional nutritional effects, generally accepted that whey fraction plays a major role. The purpose review highlight active proteins peptides comparison other types milk, emphasizing their properties roles different fields.
