ABSTRACT
Salmonella is the second most frequent bacterial pathogen involved in human gastrointestinal outbreaks European Union; it can enter food production chain from animal or environmental sources asymptomatic operators. legislation has established microbiological criteria to ensure consumer protection. listed under both process hygiene and safety criteria.
