ABSTRACT
This study presented a novel and sustainable method for producing chitin nanocrystals (PA-ChNCs) using phosphoric acid hydrolysis. The produced PA-ChNCs were used as stabilizers Pickering emulsions their physicochemical properties well stabilization mechanisms systematically investigated. exhibited small particle sizes high surface areas, enabling an effective adsorption at the oil/water interface, which prevented coalescence in emulsions. size charge strongly pH-dependent, critical factors stabilizing showed that with higher O:W ratios (50%) larger droplets but greater viscosity, forming stable gel-like matrix was more than other after storage 30 days. Emulsions concentrations (2.0 wt%) pH values (pH 10) leading to research contributes development of emulsifiers use food industry, making utilization seafood waste eco-friendly manner possible. Overall, this highlights potential newly developed products.
