Profile of Colder and Thermophilic Microbial Community Structure and Metabolites in Bovine Raw Milk in Inland Arid Zones - a Case Study in Xinjiang

ABSTRACT
Bacterial control is an important part of the production and processing cow's milk product. However, hydrolytic enzymes small-molecule metabolites from thermophilic cryophilic bacteria are still present in after low-temperature storage, transportation high-temperature sterilization, which adversely affect quality dairy products. Xinjiang, a high-quality area China, has not been systematically reported on structure bacterial communities species, sources, hazards cryptophilic/thermophilic bacteria.In this study, samples seven pastures were collected analyzed focusing community raw milk. The north south border identified 3 4 dominant phyla at phylum level, 5 15 genera genus, including Pseudomonas Acinetobacter, respectively. Non-targeted metabolome assay revealed 59 common apparently up-regulated 2 down-regulated found strains, one metabolite cryobacterial strains. Among them, such as 3,4-methylenedioxyamphetamine toxic, metabolic pathways (e.g., arginine biosynthesis galactose metabolism pathway) associated with periplasmic membrane spoilage, thus affecting product safety.
