ABSTRACT
Cheese is considered as a healthy and complete nutrient that supports part of the human needs with protein, minerals, vitamins.This study was conducted to examine mold growth in four cheese types including Kariesh, Feta, Domiati, Rumy retailed Zagazig city, Egypt.In addition, isolation identification different genera further screened.Furthermore, proteolytic lipolytic abilities identified molds were screened.Rumy samples followed by Kariesh showed highest total count.The prevalent Aspergillus spp., Penicillium Cladosporium Fusarium spp.Identification isolates revealed five species, namely, A. niger, flavus, fumigatous. ochraceous, versicolor.The detected had clear in-vitro activities.The public health significance isolated discussed.Therefore, strict hygienic measures should be adopted during all manufacture steps these kinds cheese.Aspergillus Egypt Molds
