ABSTRACT
A Pickering emulsion based on sodium starch octenyl succinate (SSOS) was prepared and its effects the physicochemical properties of hairtail myofibrillar protein gels (MPGs) subjected to multiple freeze-thaw (F-T) cycles were investigated. The whiteness, water-holding capacity, storage modulus (G') texture MPGs significantly improved by adding 1%-2% (<i>P</i> < 0.05). Meanwhile, Raman spectral analysis demonstrated that promoted transformation secondary structure, enhanced hydrogen bonds hydrophobic interactions, transition disulfide bond conformation from g-g-g g-g-t t-g-t. At an concentration 2%, <i>α</i>-helix content decreased 10.37%, while <i>β</i>-sheet increased 7.94%, compared control.After F-T cycles, structure destroyed, with increase in hardness a decrease whiteness however, quality degradation reduced 1%–2% emulsion. These findings SSOS-Pickering emulsions, as potential fat substitutes, can enhance gel stability MPGs.
