ABSTRACT
The present work is an effort to determine the generation of greenhouse gases, including carbon dioxide, methane and nitrous oxide, from cooking process that developed for chickens, meats, ribs, hamburgers pizzas, using firewood coal as a source thermal energy in commercial grills metropolitan area City Veracruz, which made up municipalities Boca del Rio, Medellin de Bravo, Jamapa Manlio Fabio Altamirano, at Veracruz State, Mexico whole They have population 882,011 inhabitants, where they exist 430 establishments this type exists, making 275 visits carry out interviews surveys, showing 74.18 % use charcoal 25.81 firewood.
