ABSTRACT
Introduction Traditional modified atmosphere packaging (MAP) cannot meet the preservation requirements of winter jujube, and high respiration rate characteristics jujube will produce an component with CO 2 concentration in traditional MAP. Micro-perforated MAP is suitable for due to its permeability, which can effectively remove excess supply O . In this study, a microporous film system that be quickly applied was developed, namely PMP-MAP (precise micro-perforated packaging). An experiment designed store at 20°C 2°C, respectively. The quality, aroma antioxidant capacity, etc. storage time were determined. Methods optimal micropore area required different temperatures first To ensure best perforation effect, effects various factors on efficiency studied. gas composition within package predicted using prediction equation perforated achieved desired target. Finally, experiments determine quality index including firmness, total soluble solids, titratable acid, reddening, decay incidence. addition, sensory evaluation, capacity also effect evaluated by combining above indicators. Results discussion At end storage, reduced contributed solids acid levels, delayed reddening jujube. maintained flavor while inhibiting occurrence alcoholic fermentation off-flavors. This attributed effective exchange facilitated PMP-MAP, thereby preventing anaerobic stress degradation. Therefore, approach efficient method
