ABSTRACT
The exopolysaccharide secreted by Lacticaseibacillus paracasei subsp. SS-01 strain (LP-EPS) is isolated and purified from yogurt. It a polysaccharide with branched multi-stranded structure, which exists in smooth rod-like or cloud-like state, possesses good thermal stability molecular weight of 49.68 kDa (±4.436%). LP-EPS shows high antioxidant capacity, anti-inflammatory anti-sensitizing activity during vitro experimental studies, half clearance (IC50) rates 0.449, 1.314, 2.369 mg/mL for the ABTS, DPPH, OH radicals, respectively, inhibition rate hyaluronidase 1.53 mg/mL. A cell-based assay, enzyme-linked immunosorbent assay (ELISA), quantitative real-time fluorescence PCR (qRT-PCR) show that effectively treats ameliorates skin inflammatory responses triggered UVB irradiation, as evidenced highly significant decrease secretion factors human keratinocytes (HaCaT), downregulation mRNA expression MAPK/AP-1 pathway cytokines.
