ABSTRACT
The sorption process of water moleculesin parsley foliage is characterized through mathematical modeling. method used was static according to the analytical technique hygroscopic equilibrium at room temperature. experimental values were fitted six models and curve obtained classified its shape adsorption levels. fresh samples represented desorption dry ones from 75% relative humidity. Different types isotherm a hysteresis loop evident in three curves for different activities. DAW, Halsey Oswin best described sorption, determined conditions evidence phenomenon established range moisture content that must present order guarantee maximum durability
