ABSTRACT
Mature sapote mamey (Pouteria sapota Jacq. H.E. Moore & Stearn) fruit were stored at 20 °C for 6 days and 5, 10 15 14 to determine the effect of storage on ripening. Sapote fruits exhibited typical climacteric behavior, with increases in production CO2 ethylene, weight loss, reduction acidity, total phenols, firmness, sugars carotenoids. Pulp color changed, synthesis soluble protein was high, there large catalase, peroxidase polyphenoloxidase activities. Fruit 5 showed lower ethylene respiration, synthesis, enzymatic A carotenoid content observed low temperatures some aspects related ripening like sugars, flesh acidity delayed, once transferred room temperatures, without affecting normal The stage affected sensitivity chilling injury.
