CARACTERIZACIÓN DE FRUTOS DE ZAPOTE MAMEY (Pouteria sapota), EN EL SUROESTE DEL ESTADO DE MORELOS

ABSTRACT
Sapote mamey is a fruit tree grown in the southwest region of Morelos State, Mexico. Its have great commercial potential, however, there are none Mexican cultivars. In this study, characteristics variability was evaluated, to use it later as basis continue studying selection potentially useful materials for that region. Nineteen were evaluated; based on dimensions, length/diameter ratio; fruit, seed, and pulp weight, well peel thickness, color components (luminosity, chrome hue), total soluble solids, sugars. Fruit, peel, weight variables with highest variation coefficient, between 25 41 %, which together seed number (CV 46 %) responsible integration 6 groups. Groups 1, 2 4 created horticultural potential genotypes. Group 1 formed by small fruits, ovoid (L/D; 1.5) values sugars (24.5 ºBrix 123.4 mg·g-1); fruits group also small, (L/D 1:6) just one closer red (hue angle 66.8); from medium size, orange 69.9) all evaluated solids (30.2 131.2 mg·g-1). The presence (300-500 g) (500-700 suggests existence different markets (fresh processed).
