ABSTRACT
Grape seed oil (GSO) consists mostly of triglycerides polyunsaturated fatty acids, which are sensitive to oxidation and the high temperatures. The aim this research was study effect GSO fortification with hydroalcoholic extracts antioxidants from grape seeds, up after 12 months. It established that immediate increase total polyphenol content (TPC) in oil, by 141.34 mg GAE/kg DPPH• antioxidant activity 0.580 mmol TE/kg (in control sample, refined these values were 1.57 0.003 TE/kg, respectively). After months, TPC decreased nearly 10-fold all fortified samples. difference between oxidative status assessed (UV-Vis).
