ABSTRACT
Garlic (Allium sativum L.) is used as both a food and traditional medicine for several illnesses throughout the world. 7 garlic cultivars (Novozamocky, Lumir, Mojmir, Havran, Garpel, Eden Rose, Bjetin) were analyzed in this study. Since modern consumer demands encourage consumption of foods with positive effects on human health, research into nutritional properties chemical composition crops, like garlic, important. Knowledge these could support cultivation highest content bioactive compounds. Total polyphenol (TPC) determined by Folin – Ciocalteau method ranged from 797.11 to 1183.98 mg GAE.kg-1 DM. flavonoid (TFC) aluminum chloride 15.96 28.18 CE.kg-1 Antioxidant activity (AA) ABTS 1.97 4.42 mmol TE.kg-1 FRAP 1.12 2.64 Statistical evaluation results showed difference between cultivars. The antioxidant substances cultivar Garpel. High correlations (p < 0.001) TPC TFC (r = 0.746), AA 0.862), 0.922), 0.792), 0.808), 0.896). confirmed be natural source antioxidants, polyphenols, flavonoids.
