Supercritical carbon dioxide (SC-CO 2 ) was used for anhydrous ovine milk fat (AMF) fractionation. Two different fractions were obtained: a low molecular weight triacylglycerol (TAG), named fraction E, and high TAG, termed R. Fractionation performed at pressure temperature values.
