In Leuconostoc oenos, different stresses such as heat, ethanol, and acid shocks dramatically induce the expression of an 18-kDa small heat shock protein called Lo 18. The corresponding gene (hsp18) was cloned from a genomic library L. oenos constructed in Escherichia coli. In Leuconostoc oenos, a malolactic bacterium, the synthesis of stress protein called LO18 with an apparent molecular mass 18 kDa was greatly induced after heat (42 degrees C), acid (pH 3) or ethanolic (12% (v/v)) shocks. Moreover, in stationary growth phase and detected for long time (30 h) during this phase. Significant identity found between N-terminal parts Hsp18 from Clostridium acetobutylicum suggesting that belongs to family small shock proteins conserved prokaryotic eukaryotic cells.
Sulfite is an antimicrobial agent used at the beginning of winemaking to avoid development undesirable microorganisms.
