Abstract The current study aims to provide insights into the drying of agro products, with a specific focus on Capsicum annum L. (red pepper). Among open sun (OSD), polyethylene bag (PBD), and polycarbonate sheet (PCSD), PCSD was efficient requiring around 24 hours maximum yield 350 g dried product per 1000 supplied fresh peppers. chili also showed greater retention antioxidant markers (capsaicin dihydrocapsaicin) than OSD PBD as evidenced by UV-VIS spectroscopy.
