Abstract The formation of Schardinger ß‐dextrin from starch by an alkalophilic Bacillus sp. (ATCC 21783) has been studied. Factors affecting the yield cyclodextrins include type, concentration, and dispersion starch; time enzymolysis, amount enzyme used. RI-HPLC及びパルスドアンペロメトリック検出イオンクロマトグラフィー(PAD-IC)による広範囲の食品に適応可能なスクラロースの分析法を作成した.試料に 10% NaCl 含有 0.01 mol/L HCl を混和して透析膜に充てんし,0.01 を透析外液として用い,24時間透析を行った.透析外液を Bond Elut ENV カートリッジに負荷して濃縮及びクリーンアップを行い,試験溶液を作製した.従来の前処理方法と比較して夾雑物の影響がなく,RI-HPLC及びPAD-ICの両分析法に適用することができた.両分析法のスクラロースの定量値はほぼ一致した.試料からの添加回収率は 88% 以上得られ,定量下限は前者で10 μg/g,後者で1 μg/g であった.

食品中の不許可合成甘味料ネオヘスペリジンジヒドロカルコン (NHDC) のHPLCによる分析法を開発した. 試料からNHDCをメタノールあるいはメタノール-水混液で抽出し, Sep-Pak Vac C18カートリッジによりクリーンアップを行った後, HPLCで測定した. HPLCのカラムにC18, 移動相にはアセトニトリル-0.02%リン酸 (25 : 75) 混液を用いて分離し, UV282nmで定量した. 更に, 検出された場合にはフォトダイオードアレイ検出器を用いて確認を行った. 各種食品に2.0及び20μg/gとなるようにNHDCを添加した場合の回収率は75.2~134%であり, 検出限界は1μg/gであった.
