This study aims to the effect of arabinoxylan (AX) on gluten quality. Ultrasounic treatment is utilized degrade water un-extractable arabinoxylans (WUAX) from wheat bran, which obtains three molecular weight AX. The results indicate that shear viscosity and particle size AX decreases ζ-potential increases after ultrasonic treatment.
