The application of animal-derived proteins as wine fining agents has been subject to increased regulation in recent years. As an alternative protein-based agents, insoluble plant-derived fibers have the capacity adsorb red tannins. Changes tannin were analyzed following derived from apple and grape agents. Other changes composition, namely, color, monomeric phenolics, metals, turbidity, also determined. Wine was maximally reduced by pomace fiber a (G4), removing 42 38%, respectively....
A new method for fast determination of stilbenoids from grape stems was developed. Ultrasound-assisted extraction applied prior to chromatographic in the extracts, and stability under conditions checked. fractional experimental design developed analyze influence on process seven different variables: temperature, ultrasound amplitude, ultrasonic cycle duration, probe type, time, sample-solvent ratio, solvent (mixtures ethanol water). The most important variables recovery major were studied...
Abstract Stilbene‐enriched wine is considered to be an interesting new food product with added value due its potential health‐promoting properties. Stilbene concentration in grape highly variable and rather scarce. However, it can increased by stress treatments. For this reason, numerous pre‐ postharvest treatments, some combinations of them, have been tested maximize stilbene content grapes. In the present manuscript, Syrah grapes were treated (i) methyl jasmonate (MEJA), (ii) ultraviolet...
The effects of five novel winemaking technologies on color were evaluated. Cold soak maceration (CSM), dry ice (DIM), prefermentative juice runoff (PJR), delestage (D), and extended (EM) the process assayed grapes from Tempranillo variety cultivated in a warm climate zone. Enological parameters determined at stemmed-crushed, pressed, bottled after 4 months aged bottle. Significant differences found intensity, percentage red blue, hue each step for every technique when compared to control...
The fact that it is possible to induce stilbenoid synthesis in grapevine (Vitis vinifera) by UV-C light allows the possibility of stimulating phytoalexin production increase disease resistance and immunity, subsequently limit use pesticides vineyards. was applied daily during three days before harvesting table grape variety Crimson seedless study accumulation compounds ripeness. E-resveratrol concentration monitored preharvest application compared with after a single application. Daily...
