In order to reduce the costs of production and increase lactic acid yields, this research adopts Bacillus subtilis substitute enzymes. The method used in study is two-phase fermentation - inoculate food waste produce sugar, then Lactobacillus yield acid. 87.22 g l–1 total sugar can be obtained from non-autoclaved 30 h saccharification at 40 centigrade. After fermentation, optimal concentration was 50.77g/L. results indicate that better than synchronous fermentation.
