地域自立高齢者76名を対象に主食・主菜・副菜を組み合わせた食事回数と栄養素等摂取量を比較検討した。2013年5月の2日間に食事記録法による栄養調査を実施した。主食・主菜・副菜の出現頻度を食事バランスガイドの0.5 SV以上の料理を摂取している場合に「あり」と定義し, 3種の料理が揃う回数を個別に算出し, 2日間の平均回数を算出した。3種の料理が揃う回数により1.5回以下, 2回, 2.5回以上の3群に分け栄養素等摂取量を比較した。男女ともに3種の料理が揃う回数が多いと食塩相当量が増加し, 女性ではビタミンCと食物繊維も増加した。3種の料理が揃う回数が多いと炭水化物を目標量範囲内に摂取する者の割合が増加した。主食・主菜・副菜の組み合わせた食事を増加させることは, 女性ではビタミンCや食物繊維摂取量の増加につながることが示唆された。
