Abstract Starch samples from different botanical species show few unifying features in either structure or function: for example both the amylose/amylopectin ratio and amylopectin chain length are found to vary extensively with botanic source. We have applied a detailed analysis data obtained small angle X‐ray scattering (SAXS) of variety starches which has shown existence constant structural periodicity. This finding suggests possibility general mechanism governing way starch is laid down species.

Bovine insulin has long been known to self-assemble in vitro into amyloid fibrils.
