ABSTRACT
Protein energy malnutrition (PEM) is an important health burden in most developing countries mainly sub-Saharan Africa, where it contributes to high rates of child morbidity and mortality. This study evaluated the efficacy compositing with snail meat powder (SMP) on protein nutritional quality sorghum-wheat buns using a rat bioassay. Nine diets -seven isonitrogenous diets, based six variations reference diet made skimmed milk powder, addition basal meant estimate endogenous nitrogen excretion 16% rehabilitation - were fed male weanling albino rats. efficiency ratio (PER), food (FER), net retention (NPRR), apparent digestibility (APD), true (TPD), corrected amino acid score (PDCAAS), digestible indispensable (DIAAS) indices determined.Fortification SMP significantly (P < 0.05) enhanced PER from 0.21% 2.70%, FER 0.02% 0.27%, APD 81.17% 88.28%, TPD 87.48% 95.38%. PDCAAS DIAAS increased 45% 78% 44% 69% respectively unfortified fortified 25% SMP.Complementary promote growth rehabilitate emaciated rats, whereas did not support weight gain.
