ABSTRACT
The first objective of this study was to evaluate the use lyophilised biomass cyanobacterium Arthrospira platensis F&M-C256 as sole substrate for lactic acid fermentation by probiotic bacterium Lactobacillus plantarum ATCC 8014. After 48 h fermentation, bacterial concentration 10.6 log CFU mL−1 and reached 3.7 g L−1. Lyophilised A. shown be a suitable L. 8014 growth. second investigate whether could enhance in vitro digestibility antioxidant activity biomass. Digestibility increased 4.4%, however it not statistically significant, while total phenolic content did increase significantly after 79% 320% respectively. This highlights potential production probiotic-based products.
