ABSTRACT
Abstract Pentadesma butter ( butyracea , sabine clusiaceae ) is an extract of the kernels tree fruits in West Africa and similar to shea butter. The study fatty acid composition, triacylglycerols, sterols tocopherols was carried out on seeds collected ten production areas Benin. results obtained show that composition acids characterized by presence stearic oleic acid, which represent nearly 96% total acids. triacylglycerols profile different butters marked overwhelming SOS SOO. unsaponifiable fraction shows, for sterolic a predominance stigmasterol (nearly 68% sterols) whilst β‐tocopherol main tocopherol.
